DUCK WITH PORCHETTA
Ingredients
- 1clean duck (1,3 kg)
- 100 grfat of ham
- 2rosemary
- 1fennel
- 1sage
- extra virgin olive oil
- vinegar
- salt
- pepper

Preparation
Warm the duck to remove the remaining hair, wash and dry it and divide in 8 pieces. Put in a bowl the fat of ham, the rosmary, the fennel, the sage, 2 spoon of oil and 2 spoon of vinegar, salt and pepper.
Distribuite the mixture on the pieces of duck, smear it in abundance, then put all in a container, cover it and seasoned the meat for 2 hours.
After bake for 1 hrs to a 180 °C, season the meat occasionally with the mixture of oil and vinegar by the rosmary.
In the last 10 minute before the end raise the temperature of the oven to 200 °C.
Serve the duck immediately.
